Being from Texas, making the perfect guacamole is something we pride ourselves on. I’ve been making this recipe for years. You can’t go wrong with this dip no matter what season it is. It’s a no-brainer during the summer with fish tacos, but guacamole can be festive too, especially with a blood orange margarita. We eat it year round in my house.
4-5 avocados halved, seeded and skins removed
1/2 small red onion, diced
About 12 cherry tomatoes, diced
Juice of one lime
1/4 cup of cilantro, chopped
1 tsp. salt
Mash avocados with a fork. Make sure not to over mash, leaving several chunks. Mix with juice of the lime. Gently fold in tomatoes, red onion, cilantro, and salt. Taste and tweak to your liking. Feel free to add a jalapeño if you like it spicy. Serve with tortilla chips and a margarita!
