In my mind this meal is the perfect summer meal. It’s super easy to make and there is very little prep involved besides gathering a few in season, fresh ingredients. These are my requirements when entertaining, or cooking for my own family come summer.
My recipe, Roasted Salmon with Chili Lime Seasoning (I use Tajin) and Brown Sugar
Serve with a sour cream lime dipping sauce and lime wedges
Coat salmon with EVOO, Tajin seasoning, and a little brown sugar.
Roast in the oven for about 15 minutes at 350 degrees
While roasting make the dipping sauce
Combine 1/2 cup of low fat sour cream, juice of half a lime, and a tablespoon of Tajin seasoning
