About once every few weeks I like to serve Greek food, especially during the summer. My entire family loves Greek, and I like to double the chicken so we have enough for leftovers. Win, win. Grilled chicken skewers, tomato salad, homemade tzatziki, and grilled (store bought) pitas make up the menu. I also make tabouleh but I go with a box, the Near East brand is my favorite. It’s so easy. Just add EVOO, lemon juice, tomatoes, cucumbers, and/or peppers.
Grilled Chicken Skewers
2 pounds of chicken tenders (I make 2 so I have enough for leftovers, but you could do 1 lb.)
1/4 cup EVOO
2 tbsp. lemon juice
1/2 tsp. coarse sea salt
1/2 tsp. lemon pepper, or ground pepper
Whisk together and add chicken. Let chicken marinate for 2 hours. Skewer and grill on a medium-hot grill for about 5 minutes on each side.
Tomato Salad
2 cups cherry tomatoes, halved
1/2 large scallion thinly sliced
1 tbsp. chopped mint
1 tsp. dried oregano
Toss together with a little EVOO and sprinkle with crumbled feta
Tzatziki
1 cup greek yogurt
1/2 persian cucumber, seeded and grated. Next squeeze the water out of the cucumber by putting it in a paper towel and wringing it out over the sink, otherwise the water will cause the sauce to separate.
1/2 the juice of a lemon
1 minced garlic clove
1 tbsp. chopped mint
1/2 tsp. salt
Mix and drizzle with EVOO
Grilled Pita
Take your favorite store bought pita, rub with EVOO and a little salt. Grill on a medium hot grill for about 2 minutes/side.
