I’m always looking for interesting and new menu items we all will eat as a family. I’m feeding three boys who like meat and carbs, which I try to limit. When I came across this recipe on Epicurious I knew I could make it while tweaking it a little so that we all would enjoy.
I replaced the suggested pork with turkey to make it a little healthier, and skipped the raisins because I’m not a big fan. I set a few of the meatballs aside for my boys before adding the cucumber salad, and served theirs with pasta, and made farro and a green salad for the adults.
Also note, I made mine on parchment paper because it makeslor easier clean up and the meatballs don’t stick. Below is the link. Enjoy!
